Tonkotsu ramen

The real thing, where the broth simmered on bones for twelve hours or more. Cloudy and thick is the sign that it did
Why this matters
Twelve hours at the stove is not about food. It is about whether you can wait.
What to do
Find a place where the broth really is simmered from pork bones for a day — ask straight out, a good place will be glad to tell you. Or make it: blanch the bones, rinse, cover with cold water and keep it at a hard boil for at least twelve hours, topping up water. The broth turns white and cloudy — that is collagen, not fat. Eat it at once, without photographing: ramen goes cold faster than you pick an angle.
Afterwards
When did I last do something that cannot be hurried?
