Why this matters
A dish you can't eat politely — and that's the whole point.
What to do
Don't buy ready dough — the whole thing rests on yeast dough: flour, water, a little milk, yeast, salt, an hour or so to rise. The cheese has to be salty and stretchy: imeretian if you can find it, otherwise suluguni mixed with mozzarella and a bit of feta for the salt. Roll out a circle, fold two edges inward and pinch the ends so you get a boat with high sides, then fill the middle with cheese to the top. Bake in the hottest oven you have, 250 degrees, twelve to fifteen minutes, until the edges go dark. Out of the oven, crack a raw yolk into the middle straight away, drop in a knob of butter, and stir it all together with a fork right there in the boat. Eat with your hands: tear off a piece of the side, dip it in the middle, repeat until it's gone.
