Why this matters
This is not dinner, it is a rite, and it does not work alone.
What to do
Invite at least three people — duck is not eaten by two, it is eaten by a table. In a good place it comes whole and is carved in front of you: first the skin, separately, almost without meat — eat it first, dipped in sugar. Then meat in a pancake with spring onion, cucumber and hoisin. Do not roll the pancake in advance and do not pile it: three or four pieces, or the taste is gone. The kitchen will make soup from the bones — ask, it comes at the end.
