Künefe
calm celebration 60 min +85 XP
Stretchy cheese in crisp kadayif pastry, soaked in syrup. Eat it hot; cold it is a different thing entirely
Why this matters
Some things don't survive waiting. It's good to catch that window on time now and then.
What to do
Make the syrup first and let it cool: sugar, water, a spoon of lemon juice, five minutes at a boil, then leave it. The cheese has to be unsalted and stretchy — hatay or dil peyniri; if you can't get it, soak mozzarella in water for an hour to pull the salt out and squeeze it dry. Pull the kadayif apart into strands with your hands, pour melted butter over and work it through so every strand is coated. Press half into the pan, a layer of cheese, the other half on top, press down and fry on medium until the bottom is deep gold, then flip the whole thing and finish the other side. Straight off the heat, pour the cold syrup over: hot onto cold, or it goes soggy. Eat it there and then, within ten minutes, cutting pieces and catching the strands; cooled kunefe is a different dish.
Afterwards
What in your life did you put off so long that it went cold?
