You do not find out what you actually know until you explain it to someone else.
What to do
Pick one small skill you do on autopilot: sharpening a knife, making a decent omelette, changing a tyre, building a spreadsheet, tying a proper knot. Find someone who will actually use it and agree on half an hour. Do not lecture: show it once slowly, then hand it over and stay quiet until they ask for help. Correct only what breaks the result — let the rest be done their way. At the end, have them run through the whole thing themselves; that is the test.
