Tartare, made by you

Raw beef, a knife instead of a grinder, capers and an egg yolk. Buy the meat from a butcher and only today's

Why this matters

Raw meat is a simple test of whether you trust your own hands and your butcher.

What to do

Go to a butcher, not a supermarket, say straight out that you're making tartare, and ask for fillet or rump cut today. At home put the meat in the freezer for twenty minutes — half-frozen, it cuts cleanly. Don't touch a mincer or a blender: cut by knife, first into slices, then strips, then three-millimetre cubes. Mix with finely chopped shallot, capers, cornichon, a drop of Worcestershire and mustard, salt and pepper it, taste and salt again — raw meat asks for more salt than you'd think. Shape it into a mound, make a well and drop in a raw yolk, ideally a farm egg. Eat it right away with toasted bread; throw away whatever is left — it doesn't keep until tomorrow.

Afterwards

What scared you more — eating it raw, or being the one responsible for it?
